Apparently it really *is* what's for dinner

Beef, that is. For dinner. Coming from a girl who was a vegetarian from 12 years old until pregnant in 2003-4 with my son, that's quite a hefty statement. As is the statement pronounced at dinner by my newly-ridiculously-picky-eats-a-prisoner's-bread-and-water-diet almost 9 year old, that "Beef is stellar, mom!". Hmmmm ... stellar. This child will not eat pasta of any kind, cream cheese, or a host of other things she has always eaten in the past. Bacon-cheese-mushroom-onion stuffed burgers? Yep - she would eat those every night if I let her.


So this posting is a plea ... help out a former vegetarian. What on earth do I coo this child with beef? My beef repetiore is very limited (read, virtually nonexistent). Fish, chicken and especially veggies (yuuuummmmm ... red peppers ...) - got those covered. Beef? Well, not so much.


Post or link to your favorite beef recipes in the comment section here and I will choose a favorite over the weekend (probably Sunday morning, as I know I will be home for a little bit then). The chosen poster will receive any one Earth*School unit of her choice (e-version).

Or tacos - we mix in a can of chili to bulk it out. I'll find and post my favorite crock pot roast tomorrow.

Meatballs, make in a similar way to your burgers but split into meatballs. I always make a huge batch and stick them in the freezer. you can then serve them with spaghetti and sauce, or with gravy and mash whatever takes your (her ;) ) fancy.

Chilli is a good one too as I always throw in a lot of veg.

I made a version of this for a few friends when they had just had babies. It got huge raves, but they were terribly sleep deprived, so I'm not sure if it's a reliable endorsement.

The pasta cake looks very interesting, but Kenna will not go near pasta of any kind with a ten foot pole. Weird child ;) Or as my mother keeps saying, bad Italian child ;)

Pot Roast in the Slow Cooker

2 - 2 1/2 pound beef chuck roast
1 tbsp Vetetable oil
2 medium carrots, chopped
2 stalks celery, sliced
1 medium onion, sliced
2 cloves garlic, minced
1 can (14 1/2 oz) stewed tomatoes, undrained
1 can (6 oz) tomato paste
1 tbsp quick-cooking tapioca
1 tbsp brown sugar
1/2 tsp salt
1/2 tsp black pepper
1 bay leaf

In a large skillet, brown roast on all sides in hot oil. Transfer to any size crock pot and add veggies.

In a small bowl, combine the rest of the ingredients and pour over meat and veggies. Cover and cook on low 10 - 12 hours or high 5 - 6 hours. Discard bay leaf. They recommend serving over egg noodles but it is still yummy alone. :)

Oh, I just found another.

Barbecued Beef in slow cooker

3 pounds boneless chuck roast
1 1/2 cups ketchup
1/4 cup packed brown sugar
1/4 cup red wine vinegar (I used apple cider vinegar because that is what I usually have)
2 tbsp dijon mustard (or whatever mustard you have - I use deli)
2 tbsp worcestershire sauce
1 tsp liquid smoke flavoring
1 2/ tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder

place meat in crock pot. Combine remaining ingredients and pour over meat. Cover and cook on low 8 - 10 hours or high 4 - 5 hours. Shred meat with forks and mix back in with sauce.

okay, that is it. I have many more beef recipes but we could be here all day...

I want to make the pot roast, but I think the hands down fav of the kids will be the hamburger gravy!
